I have a batch of dough in a bowl in the fridge.

Pita Bread - Recipe Adapted from Cooking With Julia Child

Ingredients

2 1/2 cups luke warm water

4 cups White Wheat Flour

1 Teaspoon Yeast

1 1/2 - 2 cups White flour

1 tablespoon Sea Salt

1 tablespoon Olive Oil

Instructions

  1. Mix water, 2 1/2 cups of wheat flour and yeast together in a bowl. Stir it until most of the lumps are out.
  2. Let this sponge rest for at least 30 minutes. Longer will give it a fuller flavor (I sometimes let it rest overnight)
  3. Add remaining wheat flour, olive oil and sea salt. Mix together
  4. Add white flour a 1/2 cup at a time, mixing until the dough is too stiff to stir with a spoon
  5. Turn the dough out on a lightly floured surface and Knead it until it's smooth and elastic (8 - 10 minutes)
  6. Coat a bowl lightly with oil. Put dough in the bowl, tuning once and cover with plastic wrap.
  7. Let the dough rise for 2 - 3 hours at room temperature. (until double in bulk)
  8. When it's done rising you can make your pita breads or put it in the fridge. Cover the bowl tightly, or use a large plastic bag (3 times as big as the dough.)

To Bake My Pita Bread

  • About 45 minutes or so before I’m planning on eating I turn the oven on to 450 degrees with a baking stone in it and take out enough dough to make 3 small pita’s.
  • Pita Bread Make it Today, Have it whenever you want it :)

  • The oven will be nice and hot and some of the chill will be taken off the dough.
  • I roll out my pitas not to a little less then a 1/4″ thick and pop them into a hot oven for about 5 or 6 minutes
  • PIta Breads ready to popped into the oven

    That’s when the magic should happen. The flat breads turn into a big balloon shape.

Sometimes they misbehave, but if that happens…
those misbehaving pitas are perfect to make into crackers or croutons for a salad

To Make Crackers or Croutons

  1. cut up the pitas in to cracker or bite size pieces for croutons.
  2. Toss with a bit of olive oil.
  3. Leave them plain or add some spices (I like a bit of garlic for croutons)
  4. Bake them in the oven at a low temperature until they crisp.
    You’ll want to keep an eye on them so they don’t burn

The Pita bread Recipe I use is from a cookbook I’ve had for years, Cooking With Julia Child.

I’ve adapted the recipe from it’s 50/50 white/wheat ratio to mostly all wheat. I’ll add maybe 1 – 2 cups of organic white to the mix. I find a little s white flour makes it handle better, especially since I grind my own wheat.

It can last in the fridge for a week if properly stored.
