I discovered pumpkin and buckwheat makes an incredibly delicious pancake combination and it’s gluten free too!
I’m not one to go all out making gluten free dishes.
So if you are looking a blog dedicated to gluten free recipes – you’ll quickly learn this isn’t it 🙂
I love and adore bread.
With that said I like to change it up a bit, and I’m not afraid to try a gluten free dish.
Since I’m on this pumpkin recipe kick and I have Buckwheat flour in the freezer
I decided to make Pumpkin Buckwheat Pancakes.
- Buckwheat isn’t really wheat, it’s a plant similar to rhubarb.
- And it’s supposed to be good for you too.
It’s a gamble when you get up in the morning and you start concocting a new recipe.
Hoping that it will taste good…because it’s breakfast and you don’t really want to start the day with a crappy tasting breakfast right?
I mean all the healthy ingredients in the world won’t matter much if it doesn’t taste good!
And pancakes with a cup of hot coffee or a glass of milk just has to taste good.
Since I’ve had buckwheat pancakes before and liked them
and we know I love pumpkin…I thought I’d give it a whirl.
I ended up with 7 pancakes from this recipe.
