These have become one of our Sunday Breakfast Favorites! Top it with some blueberries and real maple syrup.

With a nice hot cup of coffee on the side – it’s just heaven!

Quick to make and delicious to eat!

Lemon Poppy Seed Pancakes

Yield: 6 medium size pancakes

Lemon Poppy Seed Pancakes

Ingredients

1 cup Whole Wheat Flour

1 Tbsp Baking Powder

1/4 Tsp salt

1 1/2 Tsps poppy seeds

1 cup whole milk

1 egg

1 Tsp. vanilla

2 tablespoons real Maple Syrup

Zest of one lemon

Blueberries for garnish

Instructions

  1. Mix dry ingredients together
  2. Combine milk, eggs, vanilla, maple syrup and lemon zest to the dry ingredients. Mix well.
  3. Cook on a hot griddle for 2- 3 minutes.
  4. Flip to cook the other side.
  5. Garnish with fresh blueberries
