Feta Cheese and Artichoke Heart Salad

Yield: 4 Servings

Feta Cheese and Artichoke Heart Salad

Ingredients

1 head of Romaine Lettuce, washed and torn into bite size pieces

A couple of handfuls of Baby Spinach

1 Cucumber, sliced and halved

Several Cherry Tomatoes halved

1 6 oz jar or quartered and marinated Artichoke hearts, drained

1/2 red pepper, cut into small pieces

1/2 red onion, cut into thin slices and in half

1/2 cup cooked quinoa, cooled

Crumbled Feta Cheese

1 tsp. Italian seasoning

White Balsamic vinegar

Olive Oil

*Hot Cherry Peppers, black olives, Croutons

Instructions

  1. Prepare and mix first seven ingredients in a large bowl.
  2. Crumble feta cheese on top
  3. Sprinkle with Italian Seasoning
  4. Drizzle White Balsamic Vinegar and Olive Oil on tiop
  5. Toss.
  6. *Top with Hot Cherry Peppers, black olives, and or croutons if desired
