Feta Cheese and artichokes makes for a Delicious and tasty saled!
Feta Cheese and Artichoke Heart Salad
1 head of Romaine Lettuce, washed and torn into bite size pieces
A couple of handfuls of Baby Spinach
1 Cucumber, sliced and halved
Several Cherry Tomatoes halved
1 6 oz jar or quartered and marinated Artichoke hearts, drained
1/2 red pepper, cut into small pieces
1/2 red onion, cut into thin slices and in half
1/2 cup cooked quinoa, cooled
Crumbled Feta Cheese
1 tsp. Italian seasoning
White Balsamic vinegar
*Hot Cherry Peppers, black olives, Croutons
- Prepare and mix first seven ingredients in a large bowl.
- Crumble feta cheese on top
- Sprinkle with Italian Seasoning
- Drizzle White Balsamic Vinegar and Olive Oil on tiop
- *Top with Hot Cherry Peppers, black olives, and or croutons if desired
