Apple Crunch Crisp

Apple Crunch Crisp

A crispy crust made with Gluten Free Crispy Brown Rice Cereal.

Ingredients

4 cups Crispy Brown Rice Whole Grain Cereal separated

1/3 Cup Organic Brown Sugar

2/3 Cup Raw Honey

1/4 Cup Butter, melted

6 Medium Apples, washed, peeled, cored and sliced

1/4 Teaspoon Nutmeg

1/8 Teaspoon Ginger

1 Teaspoon Cinnamon

1/3 Cup Sliced Organic Almonds

Instructions

  1. In a blender or food processor, grind 2 cups of brown rice cereal into a flour like consistency,
  2. Add the ground brown rice to the remaining 2 cups of brown rice cereal.
  3. To this mix in the brown sugar, honey, and butter.
  4. Mix the cinnamon, nutmeg and ginger with the sliced apples
  5. Press 1/2 of the Cereal mixture into a pie plate.
  6. Layer apples over the "crust"
  7. Sprinkle Almonds over the apples
  8. Cover apples/almonds with remaining Cereal mixture
  9. Bake at 350 degrees for 20 - 30 minutes or until apples are softened.

Notes

The cereal mixture will be sticky! You will most likely need to press the mixture into the pie plate and when covering the apples/almonds with the back of your spoon or your hands.
